Chapter Two: The Calm Before The Storm

The four of us finally reconvened in Asheville at the beginning of 2010 so that we could begin moving forward on our dream! It has been a busy, but slow moving three months. And our assumptions about how easy it would be to find a location for our restaurant, make an offer, and begin construction have definitely not been met. This is a learning process, but I know that the four of us are up to the task. In the midst of pursuing every lead about every possible available location for sale or for lease in downtown Asheville, we have begun checking other items rapidly off of our list. We know that as soon as the location is solidified, that will be the moment the hurricane of momentum to get the restaurant open will begin. For the time being we have developed a logo for Heirloom Hospitality Group, finalized our name and logo for the restaurant itself, typed the business plan and details of our concept, hired a sous chef from Spain, began recipe testing and finalizing our menu, and joined the local YMCA (to counteract our otherwise rapidly expanding waistbands from all of the delicious food! YUM!).
One huge relief is that Felix, despite never having visited Asheville prior to January and basically taking a leap of faith on the location chosen by his fiance and soon to be mother-in-law, has fallen in love with this beautiful city in the Blue Ridge Mountains. He announced this revelation last weekend, the first day of spring, when the sun was shining, birds were chirping, flowers were budding, and the highs were in the 70s. Downtown was buzzing with people shopping, eating, and walking with a bounce in their step and a smile on their face. Asheville is a wonderful place to live! Hear that Google?
